This is the only pumpkin muffin recipe my family requests. It has the perfect amount of flavor, texture and crunch. My only change is using mini chocolate chips. They are outstanding, Angie, thank you for sharing!

Angie, thank you so much for sharing this recipe! I made it this morning, and it was delicious! I’m vegan, and it was easy to adapt by just using flax eggs. I didn’t have safflower oil, but canola oil worked just fine. This will definitely go into the muffin rotation. I also make your zucchini muffins frequently. I just want to let you know I’ve been following you for years now, and I have learned so much from you! Thanks for all you do!
