Quinoa Crusted Tofu Parmesan

This vegan version of an Italian classic is crispy on the outside, soft on the inside and packed with flavor!

It can be served as dinner with a salad or makes a protein packed snack or appetizer!
4 slices (1/2 a batch) contains 30 grams of protein and 5.25 grams of fiber.
